Cake Piping for Beginners: Bags, Nozzles and Russian Tips
A piping bag and a few nozzles can turn a plain cake into something special. Here's how to get started.
Piping bags
Reusable silicone or fabric bags are washable and eco-friendly. Disposable bags are handy for multiple colours. A coupler (a two-part plastic fitting) lets you swap nozzles without emptying the bag.
Common nozzle shapes
- Round: writing, dots, outlines and smooth swirls.
- Open star: classic cupcake swirls, rosettes and shells.
- Closed star: deeper ridges for dramatic swirls.
- Petal: roses and ruffles.
- Leaf: leaves to finish flowers.
- Russian tips: large nozzles with a patterned face that pipe a whole flower in one squeeze. Perfect for beginners who want instant results.
How to fill and pipe
- Fit the nozzle, then stand the bag in a tall glass and fold the top over the rim.
- Fill it about two-thirds full, unfold and twist the top to push the icing down.
- Hold the twist with one hand to squeeze; use the other to guide.
- Hold the bag at 90° for rosettes and Russian flowers, or at 45° for borders and writing.
- Squeeze evenly, stop squeezing, then lift away.
Tips for Russian tips
- Use a stiff buttercream. Soft icing loses the petal detail.
- Touch the nozzle to the cake, squeeze firmly, then pull straight up as you release.
- Put two colours side by side in the bag for two-tone flowers.
Practise first
Practise on a plate or baking paper, then scrape the icing back into the bag. Nothing is wasted.
